Valentines Day Dinner: Vegan Drinks, Appetizers, Entree and Dessert

Valentines Day Dinner

For this Valentines Day I team up with SweetSimpleVegan and TwoMarketGirls to bring you a 4 course vegan dinner to enjoy with your friends, family or loved one(s)!

So I decided to make this salad because a childhood friend showed me this recipe a long time ago and it’s still one of my favorites. To this added some cucumbers and avocado to add a little bit of added sustenance. It’s very light to eat and I love how the strawberries add a touch of sweetness to cut the acid of the vinaigrette

Strawberry Poppy Seed Salad with Walnuts

Ingredients

  • 1 small shallot (sliced thinly)

  • ½ cup strawberries (sliced)

  • 1 avocado (diced)

  • 3-4 Handfuls of mixed greens (rinsed)

Dressing

  • 2 tbsp olive oil

  • 2 tbsp Maple Syrup

  • 2 tbsp white wine vinegar

  • 1 teaspoon salt

  • 1 tablespoon poppy seeds

Instructions

  1. Thinly Slice shallot

  2. Dice avocado

  3. Slice Strawberries

  4. Into another bowl, mix up the dressing ingredients until they’re all combined

  5. Add mixed greens to a bowl, the add the shallots, avocado, strawberries, walnuts and dress the salad with the mixed dressing

Calamari

This calamari recipe actually originated from Astig Vegan’s blog. I made this when I first started my transition into this ethical lifestyle. Calamari has always been one of my favorite appetizer dishes and i figured there were some of you veggie conosuiers out there who shared the same love for calamari without the cruetly. I had a few of my own adaptations to this and i have linked the original recipe below.

Ingredients

  • vegetable oil for deep frying

  • 11 ounces or 1 large bowl of king trumpet mushroom

  • ½ cup flour of choice (I used sweet potato flour)

  • ½ cup panko breadcrumbs (or corn meal)

  • 1 tbsp dash of garlic salt

  • few pinches ground chili pepper (or cayenne pepper) (optional)

  • 1 cup non-dairy milk (I used almond milk)

  • few pinches sea salt

  • lemon wedges for serving (optional)

  • chopped fresh parsley for garnish (optional)

  • mashed avocado for dipping (optional)

Raspberry Champagne Sorbet

For the drinks I wanted something light and crisp. I also wanted to share something that could be easily nonalcoholic so everyone could enjoy it!

Ingredients

  • 2-3 scoops raspberry sorbet

  • 1 cup pink champagne I used Barefoot Pink Moscato

  • fresh raspberries for garnish
