Chocolate Marbled Banana Bread
So with this recipe I just manipulate my original Banana recipe and added some chocolate to about a cup of the banana bread mixture. This was EXTREMELY easy to do and make if you’ve already tried my Easy Banana Bread recipe!
To get the marbled affect, alternate dropping globs of banana bread batter into the pan. Drop a glob of regular and then a glob of chocolate side by side. you want to create some sort of window effect when dropping your batter in. Once all your batter is in the pan. Use a toothpick or knife and swirl to create the swirl effect by just dragging your utensil of choice through the batter. Do not go overboard on this as you will just mix the batter all together into on chocolate banana loaf :).

2 to 3 very ripe bananas, peeled (I used 3)
1/3 cup melted vegan butter ( I use Earth Balance)
1 teaspoon baking soda
1/4 cup sugar (or none at all)
1 flax egg, (1 tbsp flax meal + 3 tbsp H2O)
1 teaspoon vanilla extract
Pinch of salt
1 1/2 cups of all-purpose flour
3 ounces semisweet chocolate, chopped (a heaping 1/2 cup)
2 teaspoons natural unsweetened cocoa powder
Preheat the oven to 350°F (175°C), and butter a 4x8-inch loaf pan.
In a mixing bowl, mash the ripe bananas with a fork until completely smooth. Stir the melted butter into the mashed bananas.
Mix in the baking soda and salt. Stir in the sugar, flax egg, and vanilla extract. Mix in the flour.
Pour the chocolate into a glass bowl or measuring cup. Place the glass bowl or cup into a bowl with hot water. Stir until smooth, letting the residual heat in the bowl melt the remaining bits of unmelted chocolate. Add the cocoa powder and stir until dissolved. Add one cup of the banana bread batter to the melted chocolate and stir until well combined.
Spoon the plain batter and chocolate batter alternately into the prepared loaf pan. Swirl the batters together with a knife (don't overdo it or the colors will get muddled -- up and back 4-5 times should suffice).
Pour the batter into your prepared loaf pan. Bake for 50 minutes to 1 hour at 350°F (175°C), or until a tester inserted into the center comes out clean.
Remove from oven and let cool in the pan for a few minutes. Then remove the banana bread from the pan and let cool completely before serving. Slice and serve. (A bread knife helps to make slices that aren't crumbly.)
