Garlic Alfredo Pizza with Tofurky Italian Sausages

So I've been craving garlic chicken pizza for a minute and I have yet to try a vegan version. Since I got sick of eating a non dairy one and picking off all the chicken, I decided to finally make my own version! I seemed easy enough.

After discovering the perfect Alfredo Sauce, thanks to Hot For Food, all I had to do was figure out a dough to use as the pizza crust. If I was gonna make a pizza, I might as well just do it all from scratch. Plus, I actually love being able to make everything from scratch. I feel like you have control and know what you’re putting into you body more.

The dough I used was from the Crazy Dough that I had been testing and it worked really well! It was fluffy and soft! Only change I would make, is probably rolling out the dough thinner than I had originally rolled it out too. It was about maybe a little more than 1/2 a centimeter thick.

I was so glad I finally made this recipe. Everyone loved it! We had people over and I was able to make 1 medium size pizza with 1/4 of the dough from the Crazy dough. I ended up using half of the dough to make two pizza. Ryan loved it so much that the next day, he waited for me to come home from work to dig into the second batch of pizza. I walked into our home to him saying, “Can you warm up the pizza?” Since I've changed my diet and cooking style, it’s not very often when I hear him so openly and willingly wanting something that I’ve made vegan. So far, there’s a probably like 5 recipes that he loves and this one has been added to the list!

Ingredients

Pizza Dough: ¼ of batch of Crazy dough OR the following below

  • 2 1/2 cup (550 ml 550 g) non-dairy milk, lukewarm

  • 2 tsp sugar

  • 80 g fresh yeast or 4 tsp active dry yeast or 4 tsp instant yeast

  • 6 2/3 cup all-purpose flour 1 kg

  • 4 tsp baking powder

  • 3 tsp salt

  • 1/2 tsp lemon juice

  • 4 Tbsp + 1 tsp oil

Sauce:

  •  3/4 cups raw cashews (soaked for 20 minutes in hot water)

  • 1 cup mushroom stock (or whatever veggie stock you have) 

  • 1/2 teaspoon apple cider vinegar

  • 1/2 tablespoon lemon juice

  • 1 tablespoons olive oil

  • 1/2 cup finely chopped white onion

  • 4 garlic cloves, minced

  • 1/4 teaspoon sea salt

  • 1/4 teaspoon ground pepper

  • 1⁄8 cup nutritional yeast

Instructions

For Dough

  1. If using 1/4th of dough previously made

    • Flatten dough on lightly floured surface

    • Use rolling pin to roll out dough

    • Place dough on baking sheet to use

  2. Add and mix the instant yeast into your flour. Please see Kitchen Nostalgic if you are using other types of yeast as they provide a perfect explanation/conversion if you are using different types of yeast.

    • I personally use instant yeast because it is what I had on hand.

  3. Add all the remaining ingredients to a bowl or food processor and mix everything together until you get a soft dough. Kitchen Nostalgic describes this as a dough similar to pizza dough.

    • If you mixture appears to be too dry, add a little more water or milk until desire consistency is achieved.

    • If the mixture appears to be too soft, add a little more flour until desired consistency is achieved.

  4. Place dough into an oiled bowl and allow dough to rise until it’s double its size by placing it in a warm area

    • On top of the fridge is always a great place

    • Kitchen Nostalgic says you can use the dough right away if you’d like, but as a child I always allowed my dough to proof once before using.

  5. Flatten dough on lightly floured surface

  6. Use rolling pin to roll out dough

For Sauce:

  1. rinse and drain cashews from the soaking water and add to a high-powered blender along with water, apple cider vinegar, lemon juice, salt and peper. Blend until very smooth.

  2. In a large pan over medium heat sauté onions and garlic in olive oil for 2 minutes until soft and fragrant. Add to blended cashew mix until smooth.

Assemble Pizza:

  1. Add spoonful's of cream sauce on top of pizza dough

    • add desired amount and spread evenly

  2. Add Desired Toppings

  3. Bake at 350 Degrees F 25 mins
