Avocado Pasta Sauce w/ Kelp Noodles
So far this is my favorite dish! Spread the sauce on a plate, add a bed of pasta, fan out some 'chicken' and sprinkle on some red pepper flakes. My personal favorite is boiled kelp noodles. Trust you'll fall in love with the pop you get from biting into the noodles. You can use regular past if you'd like. We only has one package of kelp noodles and a ton of sauce left, so the rest was mixed with pasta shells since that was the only past we had hanging around. If you don't know how to make seitan, don't worry, I just recently learned how to make this and found you can't botch this one. I've also posted this for you try out :). - - 1/2 cup of cashews (min 3 hours, best overnight)
- - 1/4 cup white onion
- - 1/8 cup garlic cloves
- - 2 avocado
- - 2 tbsp lemon juice (or to taste if you want more more tangy)
- - 1 tbsp nutritional yeast ( or to taste if you want more cheesy flavor)
- - 2 tsp salt (or to taste)
- - 1 tsp white pepper
- - 1 tsp oregano
- - 2 tsp italian seasoning
- - 1/2 cup water (or until creamy...may need more than 1/2 cup)
Soften onion and garlic by boiling in water seasoned with salt for about 10 minutes. While this is cooking up, prepare the blender by adding cashews, avocados, lemon juice, seasonings and water. Once the onion and garlic are nice and soft (mushier the better), strain them from the water and add to the blender. Turn the blender on high and add more water until nice and creamy. Add more seasonings to what tantilizes your taste buds and enjoy!
